Directions:

Slice the eggplant into about ½ inch thick. Whisk together oil, balsamic vinegar, dill, thyme, oregano and basil. Season mixture with salt and freshly ground pepper and brush both sides of the sliced eggplants with the oil and vinegar mixture. Grill eggplants for about 15 to 20 minutes. Turn only once.

Grilled Eggplant Parmesan

Ingredients:

½ tsp. salt
¼ cup grated parmesan cheese
4 oz. shredded Mozzarella cheese
1 tbsp. olive oil
¼ tsp. ground pepper
½ cup basil leaves (sliced)
2 medium ripe tomatoes, each quartered

Directions:

In a bowl, mix mozzarella cheese, grated parmesan cheese, and basil and set aside. Before grilling the eggplant, brush each side with olive oil and season with salt and pepper to taste. Cook eggplant for 8-10 minutes over medium heat until lightly brown and tender. Turn only once and top the eggplant slices with tomato slices and cheese mixture. Cover and grill for another 1 to 2 minutes. This will give some time to melt the cheese and warm the tomatoes up. Serve hot and enjoy.
